Ingredients
- Crust:
1/4 cups all-purpose flour
1/2 cup unsalted butter
1/4 cup sugar
1 egg yolk
- Filling:
1 cup sugar
3/4 cup lemon juice
3 eggs
2 tbsp cornstarch
1 tbsp lemon zest
- Meringue:
3 egg whites
1/4 tsp cream of tartar
1/4 cup sugar
Directions
- Preheat oven to 350°F (175°C). Prepare the pie crust by mixing flour, sugar, and butter. Press into a pie dish and bake for 10 minutes.
- For the filling, whisk eggs, sugar, cornstarch, and lemon juice in a saucepan. Cook until thickened, pour into the crust.
- Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat to stiff peaks. Spread over lemon filling.
- Bake for 10-12 minutes until the meringue is golden brown.
