Ingredients

  • 1 can (14 oz) coconut milk

  • 2 tbsp curry paste (yellow or red)

  • 1 tbsp coconut oil

  • 1 cup tofu or chicken, diced

  • 1 bell pepper, sliced

  • 1/2 cup carrots, sliced

  • 1/2 cup broccoli florets

  • 1 tbsp soy sauce

  • Fresh cilantro and lime wedges for garnish

Directions

  • Heat coconut oil in a pan over medium heat. Add curry paste and stir for 1 minute.
  • Add coconut milk, tofu or chicken, and vegetables. Simmer for 10-12 minutes until vegetables are tender.
  • Stir in soy sauce and adjust seasoning to taste.
