Ingredients
1 can (14 oz) coconut milk
2 tbsp curry paste (yellow or red)
1 tbsp coconut oil
1 cup tofu or chicken, diced
1 bell pepper, sliced
1/2 cup carrots, sliced
1/2 cup broccoli florets
1 tbsp soy sauce
Fresh cilantro and lime wedges for garnish
Directions
- Heat coconut oil in a pan over medium heat. Add curry paste and stir for 1 minute.
- Add coconut milk, tofu or chicken, and vegetables. Simmer for 10-12 minutes until vegetables are tender.
- Stir in soy sauce and adjust seasoning to taste.
