Description
A vibrant and fresh Thai-inspired dish featuring juicy shrimp stir-fried with colorful vegetables in a creamy coconut lime sauce. Perfect for a quick and flavorful meal.

Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoons coconut oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 cup broccoli florets
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 cup coconut milk
- 2 tablespoons lime juice
- 2 teaspoons fish sauce
- 2 teaspoons soy sauce
- 1 tablespoon brown sugar
- 1/4 cup fresh cilantro, chopped
- 1 lime, sliced for garnish
- Salt and pepper to taste
- Cooked jasmine rice, for serving
Instructions
- Heat coconut oil in a large skillet over medium-high heat.
- Add garlic and ginger, sauté for about 1 minute until fragrant.
- Add shrimp to the skillet and cook until pink, about 3 minutes. Remove shrimp and set aside.
- In the same skillet, add bell peppers, snap peas, and broccoli. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Return shrimp to the skillet. Stir in coconut milk, lime juice, fish sauce, soy sauce, and brown sugar. Simmer for 3-4 minutes until sauce thickens slightly.
- Season with salt and pepper to taste. Stir in fresh cilantro before serving.
- Serve over cooked jasmine rice and garnish with lime slices.
