Spicy Chili Moroccan Grilled Chicken with Couscous

Ingredients

  • 4 boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 1/4 cup raisins
  • 1 tablespoon butter
  • 1/4 cup chopped fresh parsley
  • 1 lemon, cut into wedges

Instructions

  1. In a bowl, mix olive oil, chili powder, cumin, smoked paprika, minced garlic, salt, and pepper.
  2. Rub the mixture over chicken thighs and let marinate for 10 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill the chicken thighs for 6-7 minutes on each side or until cooked through.
  5. In a pot, bring chicken broth to a boil. Stir in couscous and raisins, cover, and remove from heat. Let it sit for 5 minutes.
  6. Fluff the couscous with a fork, stir in butter and parsley.
  7. Serve the grilled chicken over couscous with lemon wedges on the side.
