Description
A flavorful Moroccan-inspired grilled chicken dish with a spicy chili kick, served over aromatic couscous.

Ingredients
- 4 boneless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1 cup couscous
- 1 1/4 cups chicken broth
- 1/4 cup raisins
- 1 tablespoon butter
- 1/4 cup chopped fresh parsley
- 1 lemon, cut into wedges
Instructions
- In a bowl, mix olive oil, chili powder, cumin, smoked paprika, minced garlic, salt, and pepper.
- Rub the mixture over chicken thighs and let marinate for 10 minutes.
- Preheat grill to medium-high heat.
- Grill the chicken thighs for 6-7 minutes on each side or until cooked through.
- In a pot, bring chicken broth to a boil. Stir in couscous and raisins, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork, stir in butter and parsley.
- Serve the grilled chicken over couscous with lemon wedges on the side.
