Moroccan Spiced Chickpea and Eggplant Skillet

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium eggplant, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup Greek yogurt (optional, for serving)
  • Warm pita bread (optional, for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the cumin, coriander, smoked paprika, and cayenne pepper, cooking for an additional 1 minute until fragrant.
  4. Add the diced eggplant to the skillet, cooking until slightly softened, about 5-7 minutes.
  5. Stir in the chickpeas, and season with salt and pepper.
  6. Cook for another 5 minutes, allowing the flavors to meld together.
  7. Remove from heat and stir in the lemon juice and fresh parsley.
  8. Serve warm, optionally topped with Greek yogurt and accompanied by warm pita bread.
