Ingredients
- 1 cup lentils, rinsed
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon chili paste
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 carrot, diced
- 1 red bell pepper, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic, chili paste, ground cumin, smoked paprika, and ground cinnamon. Cook for 1 minute until fragrant.
- Add the diced tomatoes, vegetable broth, lentils, carrot, and red bell pepper. Stir well to combine.
- Bring to a boil, then reduce heat to a simmer.
- Cover and cook for 25-30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
