Moroccan Spicy Chili Grilled Eggplant

Ingredients

  • 2 large eggplants, sliced into 1/2 inch rounds
  • 3 tablespoons olive oil
  • 2 teaspoons Moroccan spice blend
  • 1 teaspoon chili powder
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, Moroccan spice blend, chili powder, minced garlic, salt, and pepper.
  3. Brush the eggplant slices with the spice mixture on both sides.
