Ingredients
- 2 large eggplants, sliced into 1/2 inch rounds
- 3 tablespoons olive oil
- 2 teaspoons Moroccan spice blend
- 1 teaspoon chili powder
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 lemon, juiced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup crumbled feta cheese
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, Moroccan spice blend, chili powder, minced garlic, salt, and pepper.
- Brush the eggplant slices with the spice mixture on both sides.
- Place the eggplant slices on the grill and cook for 5-6 minutes on each side, until tender and grill marks appear.
