Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 lemon, zested and juiced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 1 tablespoon butter
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine shrimp, olive oil, garlic, chili powder, paprika, salt, and pepper. Toss to coat evenly.
- Grill the shrimp for 2-3 minutes on each side until they are pink and opaque.
- In a saucepan, bring vegetable broth to a boil. Remove from heat and stir in couscous. Cover and let it sit for 5 minutes.
- Fluff the couscous with a fork and stir in lemon zest, lemon juice, parsley, mint, and butter.
- Serve the grilled shrimp over the lemon herb couscous. Garnish with additional parsley if desired.
