Moroccan Spicy Chili Grilled Chicken with Lemon Herb Couscous

Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons spicy chili paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped

Instructions

  1. In a bowl, mix olive oil, spicy chili paste, cumin, smoked paprika, minced garlic, salt, and pepper.
  2. Coat the chicken breasts with the marinade and let sit for 15 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-7 minutes on each side or until cooked through.
  5. In a pot, bring chicken broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
  6. Fluff couscous with a fork and stir in lemon juice, lemon zest, parsley, and mint.
  7. Serve the grilled chicken over the lemon herb couscous.
