Description
A flavorful Moroccan-inspired dish featuring grilled chicken marinated in a spicy chili blend, served with a refreshing lemon herb couscous.

Ingredients
- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons spicy chili paste
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup couscous
- 1 1/4 cups chicken broth
- 1 lemon, juiced and zested
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
Instructions
- In a bowl, mix olive oil, spicy chili paste, cumin, smoked paprika, minced garlic, salt, and pepper.
- Coat the chicken breasts with the marinade and let sit for 15 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-7 minutes on each side or until cooked through.
- In a pot, bring chicken broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork and stir in lemon juice, lemon zest, parsley, and mint.
- Serve the grilled chicken over the lemon herb couscous.
