Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp paprika
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups water
- 1 lemon, juiced and zested
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, chopped
Instructions
- In a small bowl, combine olive oil, chili powder, paprika, garlic, salt, and pepper.
- Toss the shrimp in the marinade until well coated.
- Preheat the grill to medium-high heat.
- Grill the shrimp for 2-3 minutes on each side until cooked through.
- While the shrimp is grilling, rinse the quinoa under cold water.
- In a medium saucepan, bring water to a boil and add the quinoa.
- Reduce heat to low, cover, and simmer for 15 minutes until quinoa is tender.
- Fluff the quinoa with a fork, then stir in lemon juice, zest, parsley, and mint.
- Serve the grilled shrimp atop the lemon herb quinoa.
