Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup coconut milk
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp fresh basil, chopped
  • Lime wedges, for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss shrimp with olive oil, salt, and black pepper.
  3. Grill shrimp for 2-3 minutes on each side until pink and opaque.
  4. In a saucepan over medium heat, combine coconut milk, lime juice, fish sauce, brown sugar, and garlic.
  5. Stir and cook for 5 minutes until slightly thickened.
  6. Remove the sauce from heat and stir in cilantro and basil.
  7. Serve grilled shrimp drizzled with the coconut lime sauce and garnished with lime wedges.
