Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup coconut milk
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp fresh cilantro, chopped
- 1 tbsp fresh basil, chopped
- Lime wedges, for serving
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, toss shrimp with olive oil, salt, and black pepper.
- Grill shrimp for 2-3 minutes on each side until pink and opaque.
- In a saucepan over medium heat, combine coconut milk, lime juice, fish sauce, brown sugar, and garlic.
- Stir and cook for 5 minutes until slightly thickened.
- Remove the sauce from heat and stir in cilantro and basil.
- Serve grilled shrimp drizzled with the coconut lime sauce and garnished with lime wedges.
