Ingredients
- 1 cup lentils, rinsed and drained
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until onion is soft and translucent, about 5 minutes.
- Stir in red bell pepper, cumin, coriander, smoked paprika, and cayenne pepper. Cook for 1-2 minutes until spices are fragrant.
- Add lentils, diced tomatoes, and vegetable broth to the pot. Stir to combine.
- Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro and a squeeze of lemon juice.
