Thai Coconut Lime Shrimp Stir-Fry

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon coconut oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 cup coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • Juice of 1 lime
  • 1 teaspoon lime zest
  • 1 tablespoon brown sugar
  • 1/4 cup fresh cilantro, chopped
  • 1 red chili, sliced (optional for heat)
  • Cooked jasmine rice, for serving

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat.
  2. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side.
  4. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add red bell pepper and snap peas. Stir-fry for 3-4 minutes until tender-crisp.
  6. Pour in coconut milk, fish sauce, soy sauce, lime juice, lime zest, and brown sugar. Stir well and bring to a simmer.
  7. Return shrimp to the skillet and cook for an additional 2 minutes, allowing the shrimp to soak up the flavors.
  8. Garnish with fresh cilantro and sliced red chili, if using.
  9. Serve hot over cooked jasmine rice.
