Description
A quick and flavorful Thai-inspired coconut lime shrimp stir-fry bursting with fresh flavors and vibrant colors.

Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon coconut oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 cup coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- Juice of 1 lime
- 1 teaspoon lime zest
- 1 tablespoon brown sugar
- 1/4 cup fresh cilantro, chopped
- 1 red chili, sliced (optional for heat)
- Cooked jasmine rice, for serving
Instructions
- Heat coconut oil in a large skillet over medium-high heat.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Add shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add red bell pepper and snap peas. Stir-fry for 3-4 minutes until tender-crisp.
- Pour in coconut milk, fish sauce, soy sauce, lime juice, lime zest, and brown sugar. Stir well and bring to a simmer.
- Return shrimp to the skillet and cook for an additional 2 minutes, allowing the shrimp to soak up the flavors.
- Garnish with fresh cilantro and sliced red chili, if using.
- Serve hot over cooked jasmine rice.
