Ingredients
- 2 salmon fillets
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 small cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
- Brush the salmon fillets with the lemon herb mixture and let them marinate while the grill heats up.
- Bring the vegetable broth to a boil in a small saucepan. Add couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine couscous, cucumber, cherry tomatoes, red onion, parsley, and mint. Toss gently to mix.
- Place the salmon fillets on the grill and cook for 4-5 minutes per side, or until fully cooked and slightly charred.
- Serve the grilled salmon on a bed of couscous salad, garnishing with additional lemon slices if desired.
