Ingredients

  • 2 salmon fillets

  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 small cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  3. Brush the salmon fillets with the lemon herb mixture and let them marinate while the grill heats up.
  4. Bring the vegetable broth to a boil in a small saucepan. Add couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
