Ingredients

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, mix olive oil, cumin, coriander, paprika, cinnamon, salt, and pepper.
  3. Brush eggplant slices with the spice mixture on both sides.
  4. Grill eggplant slices for 4-5 minutes on each side until tender and grill marks appear.
  5. In another bowl, whisk together tahini, lemon juice, honey, minced garlic, and a little water if needed to reach a drizzling consistency.
  6. Arrange grilled eggplant on a serving platter and drizzle with tahini lemon sauce.
  7. Garnish with chopped parsley before serving.
