Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Moroccan spice blend
  • 1 teaspoon chili flakes
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 lemon, juiced and zested
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon olive oil
  • 1 1/2 cups chicken broth

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, Moroccan spice blend, chili flakes, salt, and pepper.
  3. Coat the chicken breasts with the spice mixture.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. While the chicken is grilling, bring the chicken broth to a boil in a saucepan.
  6. Add couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
  7. Fluff the couscous with a fork and add lemon juice, lemon zest, parsley, mint, and olive oil. Mix well.
  8. Serve the grilled chicken on a bed of lemon herb couscous.
