Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 1 cup basmati rice
- 2 cups water
- 1 lemon, zested and juiced
- 2 tbsp fresh parsley, chopped
- 1 tbsp butter
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, garlic, chili powder, smoked paprika, cayenne pepper, salt, and pepper.
- Toss the shrimp in the marinade and let it sit for 10 minutes.
- Meanwhile, rinse the rice under cold water until the water runs clear.
- In a pot, bring water to a boil. Add rice, cover, and reduce heat to low. Cook for 15 minutes or until rice is tender.
- Remove rice from heat, add lemon juice, lemon zest, parsley, and butter. Fluff with a fork and set aside.
- Grill the shrimp for 2-3 minutes on each side until cooked through.
- Serve the grilled shrimp on a bed of lemon herb rice.
