Moroccan Spiced Lamb with Smoky Paprika Potatoes

Ingredients

  • 500g lamb shoulder, cubed
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 500g baby potatoes, halved
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 200°C (390°F).
  2. In a bowl, mix lamb cubes with olive oil, cumin, coriander, smoked paprika, salt, and pepper.
  3. Spread the lamb mixture on a baking sheet.
  4. In another bowl, mix potatoes with olive oil, smoked paprika, garlic, salt, and pepper.
  5. Add the potatoes and bell pepper to the baking sheet with the lamb.
  6. Roast in the oven for 25-30 minutes, until lamb is cooked through and potatoes are tender.
  7. Garnish with fresh parsley and serve immediately.
