Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili flakes
  • 1 cup coconut milk
  • 1 lime, juiced and zested
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine olive oil, minced garlic, chili flakes, salt, and pepper. Add shrimp and toss to coat evenly. Let marinate for 10 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the shrimp for 2-3 minutes on each side until pink and opaque.
  4. In a small saucepan over medium heat, combine coconut milk, lime juice, lime zest, fish sauce, and brown sugar. Stir continuously until the sauce thickens slightly, about 5 minutes.
