Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili flakes
- 1 cup coconut milk
- 1 lime, juiced and zested
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- Fresh cilantro, for garnish
- Salt and pepper to taste
Instructions
- In a medium bowl, combine olive oil, minced garlic, chili flakes, salt, and pepper. Add shrimp and toss to coat evenly. Let marinate for 10 minutes.
- Preheat the grill to medium-high heat.
- Grill the shrimp for 2-3 minutes on each side until pink and opaque.
- In a small saucepan over medium heat, combine coconut milk, lime juice, lime zest, fish sauce, and brown sugar. Stir continuously until the sauce thickens slightly, about 5 minutes.
