Grilled Lemon Herb Chicken with Mediterranean Vegetables

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a bowl, mix lemon juice, zest, minced garlic, olive oil, oregano, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable bag and pour marinade over them. Seal and refrigerate for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Toss the sliced zucchinis, bell peppers, and onion with balsamic vinegar, olive oil, salt, and pepper.
  5. Grill the chicken for 6-7 minutes on each side until fully cooked.
  6. Grill the vegetables for 5-7 minutes, turning occasionally, until tender and slightly charred.
