Ingredients
- 4 boneless, skinless chicken breasts
- 2 lemons, juiced and zested
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh parsley, chopped
Instructions
- In a bowl, mix lemon juice, zest, minced garlic, olive oil, oregano, thyme, salt, and pepper.
- Place chicken breasts in a resealable bag and pour marinade over them. Seal and refrigerate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Toss the sliced zucchinis, bell peppers, and onion with balsamic vinegar, olive oil, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side until fully cooked.
- Grill the vegetables for 5-7 minutes, turning occasionally, until tender and slightly charred.
- Serve the grilled chicken with the vegetables, garnished with fresh parsley.
