Ingredients
- 4 boneless chicken breasts
- 2 lemons, juiced and zested
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 1 tablespoon balsamic vinegar
- Fresh parsley for garnish
Instructions
- In a large bowl, mix lemon juice, lemon zest, garlic, olive oil, oregano, thyme, salt, and pepper.
- Add chicken breasts to the marinade and let sit for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- In a separate bowl, toss bell pepper, zucchini, and red onion with olive oil, salt, and pepper.
