Ingredients

  • Crust
  • 1 cup almond flour

  • 2 tbsp melted butter

  • 1 tbsp sweetener (e.g., erythritol)

  • Filling
  • 16 oz cream cheese

  • 1/2 cup sweetener

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/4 cup heavy cream

Directions

  • Preheat oven to 325°F (165°C). Mix almond flour, butter, and sweetener to make the crust. Press into a springform pan and bake for 10 minutes.
  • In a bowl, beat cream cheese, sweetener, vanilla, and heavy cream until smooth. Add eggs one at a time.
  • Pour the filling over the crust and bake for 40 minutes until set. Chill before serving.
