A vibrant and flavorful Korean-inspired dish featuring grilled tofu and zucchini with a spicy chili glaze. Perfect for a quick and satisfying meal.

Ingredients
- 1 block firm tofu, drained and pressed
- 2 medium zucchinis, sliced into rounds
- 3 tablespoons gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame seeds
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, whisk together gochujang, soy sauce, sesame oil, minced garlic, honey, and rice vinegar to create the spicy chili glaze.
- Cut the tofu into 1-inch cubes and toss them with half of the chili glaze. Let them marinate for 10 minutes.
- Thread the tofu cubes and zucchini slices onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the tofu is golden and the zucchini is tender.
- Brush the remaining chili glaze over the skewers during the last few minutes of grilling.
- Remove from the grill and sprinkle with sesame seeds and sliced green onions.
- Serve hot with a side of steamed rice or noodles.
