Korean Spicy Chili Grilled Tofu with Zucchini

Ingredients

  • 1 block firm tofu, drained and pressed
  • 2 medium zucchinis, sliced into rounds
  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, whisk together gochujang, soy sauce, sesame oil, minced garlic, honey, and rice vinegar to create the spicy chili glaze.
  3. Cut the tofu into 1-inch cubes and toss them with half of the chili glaze. Let them marinate for 10 minutes.
  4. Thread the tofu cubes and zucchini slices onto skewers.
  5. Grill the skewers for 10-12 minutes, turning occasionally, until the tofu is golden and the zucchini is tender.
  6. Brush the remaining chili glaze over the skewers during the last few minutes of grilling.
  7. Remove from the grill and sprinkle with sesame seeds and sliced green onions.
  8. Serve hot with a side of steamed rice or noodles.
