Ingredients

  • Crust:
  • 1/4 cups all-purpose flour

  • 1/2 cup unsalted butter

  • 1/4 cup sugar

  • 1 egg yolk

  • Filling:
  • 1 cup sugar

  • 3/4 cup lemon juice

  • 3 eggs

  • 2 tbsp cornstarch

  • 1 tbsp lemon zest

  • Meringue:
  • 3 egg whites

  • 1/4 tsp cream of tartar

  • 1/4 cup sugar

Directions

  • Preheat oven to 350°F (175°C). Prepare the pie crust by mixing flour, sugar, and butter. Press into a pie dish and bake for 10 minutes.
  • For the filling, whisk eggs, sugar, cornstarch, and lemon juice in a saucepan. Cook until thickened, pour into the crust.
  • Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat to stiff peaks. Spread over lemon filling.
  • Bake for 10-12 minutes until the meringue is golden brown.
