Ingredients

  • 2 medium eggplants, sliced

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons water
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
