Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup couscous
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese
- 1/2 cucumber, diced
- 1/4 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Add shrimp to the marinade, toss to coat, and let sit for 10 minutes.
- Meanwhile, prepare the couscous according to package instructions.
- Grill shrimp for 2-3 minutes on each side until pink and opaque.
- Fluff cooked couscous with a fork and add lemon zest, parsley, feta, cucumber, tomatoes, and red onion.
