Mediterranean Grilled Shrimp with Lemon Herb Couscous

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup couscous
  • 2 tbsp olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • 1/2 cucumber, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  3. Add shrimp to the marinade, toss to coat, and let sit for 10 minutes.
  4. Meanwhile, prepare the couscous according to package instructions.
  5. Grill shrimp for 2-3 minutes on each side until pink and opaque.
  6. Fluff cooked couscous with a fork and add lemon zest, parsley, feta, cucumber, tomatoes, and red onion.
  7. Serve grilled shrimp on a bed of couscous salad.
