Ingredients
- 500g lamb chops
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- Salt and pepper to taste
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 tablespoon olive oil for couscous
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix olive oil, smoked paprika, salt, and pepper.
- Rub the mixture onto the lamb chops evenly.
- Place the lamb chops on the grill and cook for 6-7 minutes per side or until desired doneness.
- While the lamb is grilling, bring vegetable broth to a boil in a medium saucepan.
- Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and stir in parsley, mint, lemon juice, minced garlic, and olive oil.
- Serve the grilled lamb chops with the herb couscous on the side.
