Ingredients
- 2 medium eggplants, sliced into 1/2-inch rounds
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, cumin, coriander, cinnamon, smoked paprika, salt, and pepper.
- Brush the eggplant slices with the spice mixture on both sides.
- Grill the eggplant slices for 3-4 minutes on each side until tender and grill marks appear.
- While the eggplant is grilling, melt butter in a small saucepan over medium heat.
- Add minced garlic to the butter and cook for 1-2 minutes until fragrant.
- Stir in lemon juice and parsley, then remove from heat.
- Drizzle the garlic butter sauce over the grilled eggplant and serve immediately.
