Moroccan Spiced Grilled Eggplant with Garlic Butter

Ingredients

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, cumin, coriander, cinnamon, smoked paprika, salt, and pepper.
  3. Brush the eggplant slices with the spice mixture on both sides.
  4. Grill the eggplant slices for 3-4 minutes on each side until tender and grill marks appear.
  5. While the eggplant is grilling, melt butter in a small saucepan over medium heat.
  6. Add minced garlic to the butter and cook for 1-2 minutes until fragrant.
  7. Stir in lemon juice and parsley, then remove from heat.
