Moroccan Spiced Grilled Eggplant with Tahini Lemon Drizzle

Ingredients

  • 2 medium eggplants, sliced into 1/2 inch rounds
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons water
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, ground cumin, ground coriander, smoked paprika, salt, and pepper.
  3. Brush the eggplant slices with the spice-infused olive oil.
  4. Grill the eggplant slices for about 4-5 minutes on each side until tender and grill marks appear.
  5. In another bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth and creamy.
