A delicious Moroccan-inspired dish featuring grilled eggplant seasoned with aromatic spices and drizzled with a tangy tahini lemon sauce.

Ingredients
- 2 medium eggplants, sliced into 1/2-inch rounds
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix olive oil, cumin, coriander, paprika, cinnamon, salt, and pepper.
- Brush eggplant slices with the spice mixture on both sides.
- Grill eggplant slices for 4-5 minutes on each side until tender and grill marks appear.
- In another bowl, whisk together tahini, lemon juice, honey, minced garlic, and a little water if needed to reach a drizzling consistency.
- Arrange grilled eggplant on a serving platter and drizzle with tahini lemon sauce.
- Garnish with chopped parsley before serving.
