A delightful Moroccan-inspired dish featuring tender lamb and smoky paprika potatoes, perfect for a flavorful dinner.

Ingredients
- 500g lamb shoulder, cubed
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- Salt and pepper to taste
- 500g baby potatoes, halved
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 200°C (390°F).
- In a bowl, mix lamb cubes with olive oil, cumin, coriander, smoked paprika, salt, and pepper.
- Spread the lamb mixture on a baking sheet.
- In another bowl, mix potatoes with olive oil, smoked paprika, garlic, salt, and pepper.
- Add the potatoes and bell pepper to the baking sheet with the lamb.
- Roast in the oven for 25-30 minutes, until lamb is cooked through and potatoes are tender.
- Garnish with fresh parsley and serve immediately.
