Ingredients
- 2 medium eggplants, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon fresh lemon juice
- 2 cloves garlic, minced
- Fresh cilantro, chopped, for garnish
- Plain yogurt, for serving
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, cumin, smoked paprika, chili powder, salt, pepper, lemon juice, and minced garlic.
- Brush the eggplant slices with the spice mixture on both sides.
- Place the eggplant slices on the grill and cook for 5-7 minutes on each side until tender and slightly charred.
