Moroccan Spicy Chili Grilled Eggplant

Ingredients

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • Fresh cilantro, chopped, for garnish
  • Plain yogurt, for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, cumin, smoked paprika, chili powder, salt, pepper, lemon juice, and minced garlic.
  3. Brush the eggplant slices with the spice mixture on both sides.
