Moroccan Spicy Chili Lentil Stew

Ingredients

  • 1 cup lentils, rinsed and drained
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until onion is soft and translucent, about 5 minutes.
  3. Stir in red bell pepper, cumin, coriander, smoked paprika, and cayenne pepper. Cook for 1-2 minutes until spices are fragrant.
  4. Add lentils, diced tomatoes, and vegetable broth to the pot. Stir to combine.
  5. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro and a squeeze of lemon juice.
