Ingredients

  • For the biscuit base:
  • 150 g digestive biscuits or graham crackers
  • 50 g melted butter
  • For the cheesecake filling:
  • 250 g cream cheese, softened
  • 150 ml cold heavy whipping cream
  • 50 g powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • For the strawberry sauce:
  • 200 g fresh strawberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • For topping:
  • 4–6 fresh strawberries
  • Crushed biscuits, optional
  • Fresh mint, optional

Instructions

  1. 1. Prepare the biscuit base. Crush the biscuits into fine crumbs using a food processor or place them inside a bag and crush them with a rolling pin. Mix the crumbs with the melted butter until they resemble wet sand.
  2. Divide the biscuit mixture between four small dessert glasses. Press it gently into the bottom of each glass.
  3. 2. Make the strawberry sauce. Cut the strawberries into small pieces and place them in a saucepan with the sugar and lemon juice.
  4. Cook over medium-low heat for about 5–7 minutes, stirring occasionally, until the strawberries soften and create a thick sauce.
  5. Lightly mash the strawberries while cooking, but leave a few small pieces for texture. Remove from the heat and allow the sauce to cool completely.
  6. 3. Prepare the cheesecake filling. In a bowl, beat the softened cream cheese with powdered sugar, vanilla, and lemon juice until completely smooth.
  7. In another bowl, whip the cold heavy cream until soft peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture until light, fluffy, and smooth.
  9. 4. Assemble the cups. Add a generous layer of cheesecake cream over the biscuit base.
  10. Spoon the cooled strawberry sauce over the cheesecake layer.
  11. For an even prettier dessert, you can repeat the layers: biscuits → cheesecake cream → strawberry sauce.
  12. 5. Add the topping. Finish each cup with fresh strawberry slices. Add a little crushed biscuit or a small mint leaf if desired.
  13. 6. Chill. Refrigerate the cheesecake cups for at least 1 hour before serving. For an even firmer and creamier texture, chill them for 2–3 hours.
