Description
A flavorful and easy-to-make dish featuring spicy chili grilled shrimp served over a bed of lemon herb-infused couscous.

Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 lemon, zested and juiced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 1 tablespoon butter
Instructions
- Preheat the grill to medium-high heat.
- In a mixing bowl, combine olive oil, chili powder, paprika, garlic powder, salt, and pepper.
- Add the shrimp to the bowl and toss to coat evenly with the spice mixture.
- Thread the shrimp onto skewers.
- Grill the shrimp for 2-3 minutes on each side until they are pink and cooked through.
- In a small saucepan, bring vegetable broth to a boil.
- Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and stir in lemon zest, lemon juice, parsley, mint, and butter.
- Serve the grilled shrimp over the lemon herb couscous.
