Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon butter

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, chili powder, paprika, garlic powder, salt, and pepper.
  3. Add the shrimp to the bowl and toss to coat evenly with the spice mixture.
  4. Thread the shrimp onto skewers.
  5. Grill the shrimp for 2-3 minutes on each side until they are pink and cooked through.
  6. In a small saucepan, bring vegetable broth to a boil.
  7. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  8. Fluff the couscous with a fork and stir in lemon zest, lemon juice, parsley, mint, and butter.
  9. Serve the grilled shrimp over the lemon herb couscous.
