Spicy Chili Grilled Shrimp with Lemon Herb Couscous

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon butter

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine shrimp, olive oil, garlic, chili powder, paprika, salt, and pepper. Toss to coat evenly.
  3. Grill the shrimp for 2-3 minutes on each side until they are pink and opaque.
  4. In a saucepan, bring vegetable broth to a boil. Remove from heat and stir in couscous. Cover and let it sit for 5 minutes.
  5. Fluff the couscous with a fork and stir in lemon zest, lemon juice, parsley, mint, and butter.
