Spicy Chili Grilled Shrimp with Lemon Herb Quinoa

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups water
  • 1 lemon, juiced and zested
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh mint, chopped

Instructions

  1. In a small bowl, combine olive oil, chili powder, paprika, garlic, salt, and pepper.
  2. Toss the shrimp in the marinade until well coated.
  3. Preheat the grill to medium-high heat.
  4. Grill the shrimp for 2-3 minutes on each side until cooked through.
  5. While the shrimp is grilling, rinse the quinoa under cold water.
  6. In a medium saucepan, bring water to a boil and add the quinoa.
  7. Reduce heat to low, cover, and simmer for 15 minutes until quinoa is tender.
  8. Fluff the quinoa with a fork, then stir in lemon juice, zest, parsley, and mint.
  9. Serve the grilled shrimp atop the lemon herb quinoa.
