Thai Coconut Lime Shrimp Stir-Fry

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 2 teaspoons fish sauce
  • 2 teaspoons soy sauce
  • 1 tablespoon brown sugar
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, sliced for garnish
  • Salt and pepper to taste
  • Cooked jasmine rice, for serving

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat.
  2. Add garlic and ginger, sauté for about 1 minute until fragrant.
  3. Add shrimp to the skillet and cook until pink, about 3 minutes. Remove shrimp and set aside.
  4. In the same skillet, add bell peppers, snap peas, and broccoli. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. Return shrimp to the skillet. Stir in coconut milk, lime juice, fish sauce, soy sauce, and brown sugar. Simmer for 3-4 minutes until sauce thickens slightly.
  6. Season with salt and pepper to taste. Stir in fresh cilantro before serving.
  7. Serve over cooked jasmine rice and garnish with lime slices.
