Description
A quick and delicious Thai-inspired shrimp stir-fry with a refreshing coconut lime flavor.

Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoons coconut oil
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup sugar snap peas
- 1 cup coconut milk
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 teaspoon soy sauce
- 1 tablespoon brown sugar
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, sliced for garnish
- Salt and pepper to taste
- Cooked jasmine rice, for serving
Instructions
- Heat coconut oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add shrimp and cook until they turn pink, about 3-4 minutes.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add red bell pepper and sugar snap peas. Stir-fry for 3-4 minutes until tender-crisp.
- Pour in coconut milk, lime juice, fish sauce, soy sauce, and brown sugar. Stir to combine.
- Return shrimp to the skillet and stir to coat with the sauce. Cook for another 2-3 minutes.
- Add chopped basil and cilantro, stir well, and remove from heat.
- Season with salt and pepper to taste.
- Serve hot over cooked jasmine rice, garnished with lime slices.
