Thai Coconut Lime Shrimp Stir-Fry

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup sugar snap peas
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon soy sauce
  • 1 tablespoon brown sugar
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, sliced for garnish
  • Salt and pepper to taste
  • Cooked jasmine rice, for serving

Instructions

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp and cook until they turn pink, about 3-4 minutes.
  4. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add red bell pepper and sugar snap peas. Stir-fry for 3-4 minutes until tender-crisp.
  6. Pour in coconut milk, lime juice, fish sauce, soy sauce, and brown sugar. Stir to combine.
  7. Return shrimp to the skillet and stir to coat with the sauce. Cook for another 2-3 minutes.
  8. Add chopped basil and cilantro, stir well, and remove from heat.
  9. Season with salt and pepper to taste.
  10. Serve hot over cooked jasmine rice, garnished with lime slices.
