Thai Coconut Lime Shrimp Stir-Fry

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon coconut oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, sliced for garnish
  • Cooked jasmine rice, for serving

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat.
  2. Add garlic and ginger, sauté for 1 minute until fragrant.
  3. Add shrimp to the skillet, season with salt and pepper, and cook until pink, about 2-3 minutes.
  4. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add red bell pepper and snap peas. Stir-fry for 3-4 minutes until tender-crisp.
  6. Pour in the coconut milk, lime juice, fish sauce, and brown sugar. Stir well and bring to a simmer.
  7. Return the shrimp to the skillet and cook for another 2 minutes, allowing the flavors to meld.
  8. Serve over cooked jasmine rice, garnished with fresh cilantro and lime slices.
