Description
A refreshing and zesty Thai-inspired shrimp stir-fry with a coconut lime flavor profile. Perfect for a quick and easy dinner.

Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon coconut oil
- 1 red bell pepper, sliced
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can (13.5 oz) coconut milk
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 teaspoon brown sugar
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- 1 lime, sliced for garnish
- Cooked jasmine rice, for serving
Instructions
- Heat coconut oil in a large skillet over medium-high heat.
- Add garlic and ginger, sauté for 1 minute until fragrant.
- Add shrimp to the skillet, season with salt and pepper, and cook until pink, about 2-3 minutes.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add red bell pepper and snap peas. Stir-fry for 3-4 minutes until tender-crisp.
- Pour in the coconut milk, lime juice, fish sauce, and brown sugar. Stir well and bring to a simmer.
- Return the shrimp to the skillet and cook for another 2 minutes, allowing the flavors to meld.
- Serve over cooked jasmine rice, garnished with fresh cilantro and lime slices.
