Thai Grilled Coconut Lime Shrimp

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 cup coconut milk
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together coconut milk, lime juice, garlic, fish sauce, sugar, salt, and pepper.
  2. Add shrimp to the marinade, toss to coat, and let sit for 10 minutes.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Thread shrimp onto skewers.
  5. Grill shrimp for 2-3 minutes on each side until pink and opaque.
  6. Remove from grill and garnish with chopped cilantro.
  7. Serve immediately with lime wedges on the side.
