Ingredients
- 1 lb shrimp, peeled and deveined
- 1/2 cup coconut milk
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
- Fresh cilantro, chopped for garnish
- Lime wedges for serving
Instructions
- In a medium bowl, whisk together coconut milk, lime juice, garlic, fish sauce, sugar, salt, and pepper.
- Add shrimp to the marinade, toss to coat, and let sit for 10 minutes.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Thread shrimp onto skewers.
- Grill shrimp for 2-3 minutes on each side until pink and opaque.
- Remove from grill and garnish with chopped cilantro.
- Serve immediately with lime wedges on the side.
