Ingredients
- 4 boneless chicken thighs
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon lemon zest
- 1 tablespoon soy sauce
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, thyme, cilantro, salt, pepper, lemon zest, and soy sauce.
- Add chicken thighs to the marinade and let it sit for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken thighs for 6-7 minutes on each side or until fully cooked.
- While the chicken is grilling, brush zucchini slices with olive oil and grill for 3-4 minutes on each side until charred.
