Thai Stir-Fried Lemon Herb Shrimp with Zucchini Noodles

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 medium zucchini, spiralized
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 2 tablespoons soy sauce
  • Juice of 1 lemon
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and ginger, sauté until fragrant, about 1 minute.
  3. Add shrimp and red bell pepper to the skillet, stir-fry until shrimp is pink and cooked through, about 4-5 minutes.
  4. Stir in soy sauce and lemon juice, then add spiralized zucchini.
  5. Toss everything together for 2-3 minutes until zucchini is slightly tender.
  6. Remove from heat, stir in fresh basil and cilantro.
