Ingredients
- 1 lb shrimp, peeled and deveined
- 2 medium zucchini, spiralized
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 2 tablespoons soy sauce
- Juice of 1 lemon
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh cilantro, chopped
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and ginger, sauté until fragrant, about 1 minute.
- Add shrimp and red bell pepper to the skillet, stir-fry until shrimp is pink and cooked through, about 4-5 minutes.
- Stir in soy sauce and lemon juice, then add spiralized zucchini.
- Toss everything together for 2-3 minutes until zucchini is slightly tender.
- Remove from heat, stir in fresh basil and cilantro.
- Season with salt and pepper to taste.
- Serve immediately with lemon wedges on the side.
