Thai Stir-Fried Shrimp with Coconut Lime

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/4 cup fresh cilantro, chopped
  • 2 cups cooked jasmine rice, for serving
  • Lime wedges, for garnish

Instructions

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add garlic and ginger, sauté until fragrant, about 1 minute.
  3. Add shrimp and cook until pink, about 3-4 minutes.
  4. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add red bell pepper and snap peas, stir-fry for 3-4 minutes.
  6. Pour in coconut milk, lime juice, fish sauce, soy sauce, and sugar. Stir well.
  7. Return shrimp to the skillet, cook for another 2-3 minutes until heated through.
  8. Garnish with cilantro and serve over jasmine rice with lime wedges.
