Description
A vibrant Thai dish featuring stir-fried shrimp in a creamy coconut lime sauce, perfect for a quick and flavorful meal.

Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons coconut oil
- 1 red bell pepper, sliced
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 can (14 oz) coconut milk
- 2 tablespoons lime juice
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/4 cup fresh cilantro, chopped
- 2 cups cooked jasmine rice, for serving
- Lime wedges, for garnish
Instructions
- Heat coconut oil in a large skillet over medium heat.
- Add garlic and ginger, sauté until fragrant, about 1 minute.
- Add shrimp and cook until pink, about 3-4 minutes.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add red bell pepper and snap peas, stir-fry for 3-4 minutes.
- Pour in coconut milk, lime juice, fish sauce, soy sauce, and sugar. Stir well.
- Return shrimp to the skillet, cook for another 2-3 minutes until heated through.
- Garnish with cilantro and serve over jasmine rice with lime wedges.
