Thai Stir-Fried Tofu with Coconut Lime

Ingredients

  • 200g firm tofu, cubed
  • 2 tablespoons coconut oil
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 1 tablespoon lime juice
  • 1/2 teaspoon lime zest
  • 200ml coconut milk
  • 1 tablespoon fish sauce (optional)
  • 1 tablespoon brown sugar
  • 1 cup bell peppers, sliced
  • 1/2 cup snap peas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat coconut oil in a skillet over medium heat.
  2. Add cubed tofu and stir-fry until golden brown on all sides, about 5 minutes.
  3. Stir in minced garlic and sliced red chili. Cook for 1 minute until fragrant.
  4. Add soy sauce, lime juice, lime zest, coconut milk, fish sauce, and brown sugar. Stir well to combine.
  5. Bring the mixture to a simmer and add bell peppers and snap peas.
  6. Cook for another 5-7 minutes until vegetables are tender-crisp.
  7. Garnish with fresh cilantro and serve with lime wedges.
