Ingredients
- 200g firm tofu, cubed
- 2 tablespoons coconut oil
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 red chili, sliced
- 1 tablespoon lime juice
- 1/2 teaspoon lime zest
- 200ml coconut milk
- 1 tablespoon fish sauce (optional)
- 1 tablespoon brown sugar
- 1 cup bell peppers, sliced
- 1/2 cup snap peas
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat coconut oil in a skillet over medium heat.
- Add cubed tofu and stir-fry until golden brown on all sides, about 5 minutes.
- Stir in minced garlic and sliced red chili. Cook for 1 minute until fragrant.
- Add soy sauce, lime juice, lime zest, coconut milk, fish sauce, and brown sugar. Stir well to combine.
- Bring the mixture to a simmer and add bell peppers and snap peas.
- Cook for another 5-7 minutes until vegetables are tender-crisp.
- Garnish with fresh cilantro and serve with lime wedges.
