How to choose tofu

Tofu comes in different firmnesses. Firm and extra-firm hold their shape for grilling, stir-frying and roasting, while soft and silken types suit blended and delicate dishes. For most of our savory recipes, firm or extra-firm is the right choice.

How to store tofu

Keep tofu refrigerated. Once the package is opened, store any unused tofu submerged in fresh water in a covered container and change the water regularly to keep it fresh for a few days. Tofu can also be frozen, which changes its texture to a chewier, spongier bite that soaks up marinades.

How to cook tofu

Tofu is mild, so flavor comes from seasoning and marinades. Pressing firm tofu to remove excess water before cooking helps it brown and hold together. Give it time to form a crust before turning. It grills, stir-fries and roasts beautifully, and a cornstarch coating can make it extra crisp.
