Ingredients
- 500g lamb cubes
- 2 tablespoons olive oil
- 1 tablespoon spicy chili paste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 zucchinis, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- Juice of 1 lemon
- Fresh cilantro for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, spicy chili paste, cumin, paprika, salt, and black pepper to form a marinade.
- Add lamb cubes to the marinade and coat thoroughly. Let them marinate for 10 minutes.
- While the lamb is marinating, prepare the vegetables. Toss zucchinis, bell pepper, and onion with a little olive oil and salt.
- Grill the lamb cubes for about 4-5 minutes on each side or until desired doneness.
- Simultaneously, grill the vegetables until they are tender and slightly charred, about 6-8 minutes.
- Drizzle lemon juice over the grilled lamb and vegetables.
- Serve hot, garnished with fresh cilantro.
