Moroccan Spicy Chili Lamb with Grilled Vegetables

Ingredients

  • 500g lamb cubes
  • 2 tablespoons olive oil
  • 1 tablespoon spicy chili paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • Juice of 1 lemon
  • Fresh cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, spicy chili paste, cumin, paprika, salt, and black pepper to form a marinade.
  3. Add lamb cubes to the marinade and coat thoroughly. Let them marinate for 10 minutes.
  4. While the lamb is marinating, prepare the vegetables. Toss zucchinis, bell pepper, and onion with a little olive oil and salt.
  5. Grill the lamb cubes for about 4-5 minutes on each side or until desired doneness.
  6. Simultaneously, grill the vegetables until they are tender and slightly charred, about 6-8 minutes.
  7. Drizzle lemon juice over the grilled lamb and vegetables.
  8. Serve hot, garnished with fresh cilantro.
