Moroccan Spicy Chili Lentil Stew

Ingredients

  • 1 cup lentils, rinsed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 carrot, diced
  • 1 red bell pepper, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic, chili paste, ground cumin, smoked paprika, and ground cinnamon. Cook for 1 minute until fragrant.
  4. Add the diced tomatoes, vegetable broth, lentils, carrot, and red bell pepper. Stir well to combine.
  5. Bring to a boil, then reduce heat to a simmer.
  6. Cover and cook for 25-30 minutes, or until the lentils are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.
