Ingredients
1 whole chicken (4-5 lbs)
2 tbsp olive oil
4 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 lemon, quartered
Salt and pepper to taste
1 lb baby potatoes, halved
3 large carrots, cut into chunks
Directions
- Preheat oven to 425°F (220°C).
- Rub the chicken with olive oil, garlic, rosemary, thyme, salt, and pepper. Place the lemon quarters inside the cavity of the chicken.
- Arrange potatoes and carrots around the chicken in a roasting pan.
- Roast for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C). Let rest for 10 minutes before carving.
- Serve with the roasted vegetables.
