Ingredients

  • 1 whole chicken (4-5 lbs)

  • 2 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • 1 lemon, quartered

  • Salt and pepper to taste

  • 1 lb baby potatoes, halved

  • 3 large carrots, cut into chunks

Directions

  • Preheat oven to 425°F (220°C).
  • Rub the chicken with olive oil, garlic, rosemary, thyme, salt, and pepper. Place the lemon quarters inside the cavity of the chicken.
  • Arrange potatoes and carrots around the chicken in a roasting pan.
  • Roast for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C). Let rest for 10 minutes before carving.
  • Serve with the roasted vegetables.
